Cinnamon-Sugar Tortilla Crisps
5 Tortillas
2 Tbs butter
Sugar and Cinnamon to taste
2TBS oil
Butter both sides of each tortilla. Sprinkle both sides of the buttered tortilla with sugar and cinnamon. In the meantime, heat pan to medium. Fry tortillas for about 1 minute on each side. Make sure not too overcook. Your tortillas should puff up when they are ready to be turned over.
Bean Burritos
Package of tortillas
2 C of cheese
1 Can of rotel
1 Can kidney beans
1 Can navy beans
1 Package of enchilada seasoning
¼ C of water
Mix navy and kidney beans, rotel and enchilada seasoning. ½ cup of cheese and water. Bring to a simmer. Fill and roll tortillas with mixture. Top with remaining cheese. Cover for 350 degrees for 25 minutes or until the cheese melts.
Easy Blueberry Pie
1 Package of ready made graham cracker crust
1 Can blueberry pie filling
2 Tbs cream cheese
1 tub whipped cream
Let whipped cream and cream cheese soften. Spread cream cheese along the bottom of the graham cracker crust. This should only be a thin layer. Add blueberry pie filling. Top the pie with softened, whipped cream. Loosely cover and let sit in fridge for 1-3 hours.

o Two zucchini
o Two carrots
o ½ acocado (peeled, cored and sliced)
o 2 Tbs red onion (finely diced)
o ½ tsp dill
o ½ c. sour cream (no fat)

o One Tbs. vinegar (red wine)
o 12 lettuce leaves (Romaine or your favorite)
Chill ingredients. Grate zucchini & carrots. Slice avocado. Mix, dill, pepper, vinegar, zucchini, red onion, carrots and sour cream. Add to vegetable mixture. Place ¼ c. of mixture in the side of the lettuce leaf. Roll and serve. Garnish with grated carrots.

o Two Chopped Green Onions
o Two Tbs. Olive Oil
o One Tbs. Lemon Juice

Papaya & Pineapple Salad
o 1 c. papaya (cube)
o 1 c. Pineapples (sliced or chunked)
o 1 lemon
o 1 Tbs. Vanilla yogurt

Believe it or not, gluten. My husband polished his plate in seconds. When I told him it was gluten he had eaten, his jaw dropped! I am not exaggerating when I tell you these three great vegetarian recipes will change your life!
Of the three recipes above, the last one - vegetarian ribs - is what I recommend to friends who can't cook to save their life. Vegetarian ribs is a very forgiving recipe. You can mess up many of the steps and end up with a mix that feels and looks like a huge mistake but once you've finished baking, you won't be able to stop smacking your lips in satisfaction.
